Honey Almond Granola

Finally, my husband has developed some liking for Granola. He tops his favorite Avocado banana smoothie with crunchy granola clumps for something to bite through. He surprised me once at midnight saying that he was having a bad craving for granola and wanted them right away. I told him we were running out of stock. He said I still want it right now. I got up n told him he needs to wait at least for half an hour. He thought I was kidding. After half an hour, there I was ready with a bowl of granola for us to munch on. So, this was my crazy midnight preparation and I was energetic enough to keep my camera focused.
Granola is an excellent breakfast to kick-start you are day. It has the ability to lower cholesterol, regulate digestion, aid in weight loss, improve heart health. Granola has a notable amount of iron and Vitamin-E. Big reasons to give it a sacred place in your diet plan.
This was my first take on granola (though I had read the recipe somewhere months back) and I loved the fact that I could control what goes into it. Limit the amount of oil, sugar etc and add ingredients of my choice. Prepare your granola on weekends and stock it up for busy weekday mornings. Just pour some clumps over your favorite flavored or plain Greek yogurt, add some fresh fruits and you are ready to dig in.





Ingredients:
Rolled Oats - 4 cups
Oats Bran - 1/2 cups
Extra virgin Olive oil - 1/4 cup
Honey - 1/4 cup
Sesame seeds + Flax Seeds - 1/2 cup
Halved Almonds - 1 cup
Pure Vanilla Extract - 2 tsp
Grounded Cinnamon - 1 tsp (as per taste)
Brown Sugar - 2 tbsp
Sea Salt - little sprinkles, if using regular salt add 1/4 tsp

Directions:
- In a large mixing bowl, take oats, oats bran, cinnamon, almonds, seeds and sea salt. Mix well. (Save brown sugar for later)
- Stir in honey, oil and vanilla extract.
- Set the mixture on a baking tray lined with parchment sheet. Bake in a preheated oven at 350 degree F for 20-24 minutes.
- After 10-12 minutes or midway, stir the oats mixture for even cooking. Add brown sugar to the mixture, mix well and the set the mixture on the tray pressing with the back of a spatula. (Beware of the heat)
- Back in the oven for 10-12 minutes.
- Keep the tray on the cooling rack and forget about if for 5-6 hours. This will help the granola to form clumps.
- Once cooled completely, store it in a wide mouth air-tight container for 2 weeks at room temperature or in the refrigerator for longer life.
Serve it with Greek yogurt and fresh berries!!!
Tips:
- Add any nuts or seeds of your choice. You might even like to add dried fruits like cranberries, cherries or apricots.
- To get clumpy granola make sure to add brown sugar as it helps the oats to stick together.

Store the Granola in a wide mouth air-tight container.
