Mooli ke patte / radish leaves stir-fry

I got three bunch of radish in $2 from the Sprouts Farmer's market. I was really excited about the great price. With a bunch that I had bought earlier I prepared Mooli ke patte ki Kadhi and Moong dal tadka with radish leaves as a secret ingredient. My husband loved those two dishes. So, with these 3 bunches I thought it would be a good idea to try the stir-fry version as the quantity of leaves I had with me was perfect for what the recipe calls for.

Radish leaves has anti-inflammatory properties and is know to reduce arthritis pain. It boasts the immune system and prevents diabetes and iron-deficiency. Such are the benefits of this much underrated greens. So, why not use it in the form you like the best rather than throwing it way.

This is definitely not a recipe anyone would be excited to try but I bet its super healthy. It complements best with dal fry/tadka, rice, roti and pickle. Scroll down for the procedure.

Ingredients:

Fresh Produce:

Radish leaves- 3 cups chopped

Either Radish bulbs (8-10) or Potato (2 medium size)

Onions (preferably yellow) - 1 large

Serrano peppers/chillies - 3 (as per taste)

Spices:

Mustard seeds - 1 tsp

Dry red whole chillies - 1

Asafoetida- 1/2 tsp

Salt - 1 tsp (to taste)

Oil - 1 tsp

Directions:

- Wash the radish greens thoroughly in running tap water and fine-shred them.

- Cut the Radish/Potato into cubes.

- Finely chop onions and peppers.

- Heat oil in a pan and add mustard seeds.

- After the mustard stops crackling add dry red chillies & asafoetida and then peppers/chillies.

- Add onion and salt. Cook it untill it becomes translucent.

- Time to add Radish/Potatoes. Cook untill 80% done.

- Now add the Radish leaves and stir fry without covering with a lid untill all the water evaporates.

Tips:

- When u get the radish bunch home. Separate the leaves from the bunch and store it. Consume within two days as salad or add it to other recipes as hidden ingredient :P
