Crunchy Cabbage Salad

I happened to visit Whole Foods Market sometime back. While i was in their meals and entrées section, this salad grabbed my attention not because it was mouthwatering but for the reason that it looked so lame when it was kept side-by-side with hundreds of gorgeous dishes out there. I almost laughed, thinking who would buy this? I was so curious that I quickly browsed through the list of ingredients which was placed beside the salad. Looked interesting! However, I was still skeptical about the taste.

One day i had a cabbage sitting in my refrigerator. I did not know what to do with it. But, wanted to try something new. Just then, this unusual recipe flashed my mind and I decided to give it a shot.

I grabbed everything that goes into making it, tweaked the recipe to suit my taste and mixed everything. Now was the time to face the truth. Heavens! how good it was. Surprisingly, it was the most unique salad I had ever tasted. From that day, till today and in days to come this salad is sure to be a regular part of my meal. This was a little story of how this salad won my heart.

Cabbage haters beware! you might be glued to this recipe forever :D

Watching your calorie intake? Cabbage might be a great choice as a small head (approx 700 g) contains only 176 calories. Its quite filling and blocks hunger pangs. And this enriched crunchy cabbage salad is a bliss. With lots of healthy nuts added to it you are sure to get all the vitamins and omega-3s in this world.

Already feeling healthy by just the thought of it ;) Let's quickly go over..

Ingredients:

Green Cabbage - 1 small head (700 g)

Green Chilies- 2

Extra virgin Olive oil - 2 tsp

Chai seeds/Sabza

- 1 tbsp or more

Chopped Roasted Almonds - 20-25

Golden raisins - 1/4 cup

Cranberries - 3/4 cups

Roasted Sesame seeds- 1/4 cups

Roasted and grounded Flax seeds - 1 and 1/2 tbsp

Apple cider vinegar - 1 tsp

Himalayan Pink salt/ regular salt - 1 tsp

optional - Roasted Sunflower, pumpkin seeds or any nuts of your choice.

Directions:

- Wash the green cabbage head and chilies. Shred cabbage and finely chop the green chilies.

- Put your greens in a deep glass dish/bowl. Makes mixing easier.

- After this I try squeezing the slized cabbage (not that harshly though). It release little moisture which helps the chia/sabza seeds to swell a bit and form a translucent film around them

- Add all the nuts and dry fruits.

- Add vinegar and salt. Mix it well.

- Now drizzle a little olive oil and mix.

- You may add a dash of honey. Though, I don't find a need of adding it as the golden raisins and cranberries contribute enough to the sweetness that this salad desires.

- Place the salad in an air tight container in the refrigerator for at least 4-5 hours before serving.

It takes that much time for the flavors to come together.

Serve Chilled !!!

Tips:

- Can be made ahead of time for parties or lunch boxes as it stays good in the refrigerator for 3 days.

- Roast the nuts separately in microwave for about 2 n 1/2 to 3 min. Makes your life so much easier.
